Same with many members on this site ...
I find that if you kick with different parts of your foot, some are higher risk than others. For example if you do a front kick with the ball of your foot you could potentially jam your toe.

For me it depends on where im kicking if its a leg kick ill use the middle or lower shin, but anything higher i feel has to much of a chance of being caught(Maybe just because im about 6ft3 so its easier to catch my leg) and ill just use the instep.

Over the years, I've found that if you don't connect well with your kick it can end up with your foot/leg crippled for the fight. Roundhouse kicks for example, if you hit with the part of the foot closer to the toe it can cause pain in the foot. (may be due to my several ankle injuries over the years)
