Sanchin is a kata, meaning 3 battles, the origins of the kata is chinese. It is one of the core kata's in Okinawa, and can be found in a number of styles, there are also a number of variations it as well. but all utilize the sanchin stance, or hour glass stance.

Kokoro is spot on about the complexity of this kata in particular.
Depending on the way that you practice the kata, will tell you what you are working on with it. In it's more advanced stages, this kata is a qigong practice, along the lines of iron shirt skill.

Why do most of the people who practise this kata seem to be very sinewy? Is this an effect of the kata itself, or just their karate training in general?

It's both. Many old timers will do this kata every day, multiple times a day. the type of workout it supplies will create the effect.

It's certainly very impressive, that kind of physique seems to be the ideal build for martial arts.
