different lineages teach different things like my lineage has a roundhouse kick to the head and many people from vietnamese lineage use a front kick to the face.
there aren't really any moves universally taught in wc and it's where bruce lee got his idea of jkd from and after all ip man even changed his style totally different than how he learned it.
you would be surprised how many chunners say jkd is just lees lineage of wc.

Traditional Wing Chun uses front push kicks but only to the legs. Roundhouse kicks were not practiced and I'm not sure if they are in newer gyms.
Bruce Lee had a problem with Wing Chun and Kung fu martial arts and that was the lack of kicking techniques. Many Kung Fu styles do teach kicks but not enough in one style to make a kick very universal. There is a "law" in Kung Fu that kicks should be low and punches should be high.

Every one I visited used roundhouse kicks to the knees.

Roundhouse is actually quite new. Even Karate didn't have it until the end of the 20th century.

again it varries from lineage to lineage and some have nothing in common with others except the name and forms.
and ip man isn't traditional wing chun he created his own version modified to be taught easier in a short period of time compared to what his teacher taught him and if you compare their two styles he left a lot out.
and if ip man could change it and it's still wing chun can't other people?
