Are we top of the food chain or have we merely removed ourselves from it? Feel free to weigh in with your thoughts here.

Depends on how you look at it. Anatomically speaking, human beings aren't actually supposed to be meat eaters. We don't have the teeth for it, the coordination to tackle prey, or the gastrointestinal system of a meat eating animal. We don't properly digest and process animal protein at all. But that said, people of all the Worlds regions have been eating any type of meat you could think of for ages. I'd say we aren't removed from it or on top of it - we just forced our way up in it, likely as a necessity for our survival in many places. But it's not often I hear of a human being tackling a tiger and eating every last bit of flesh on it's body in 10 minutes as opposed to the other way around.

"Food Chain"? - no. Food Web? - yes. where the arrows represent where the food's energy, through consumption, is going.

Teeth can be surprisingly deceptive. Just look at the giant panda. Carnivore skull, jaws and teeth - herbivore diet. Goes back the other way for some rabbits. Not only are they capable of turning carnivore they're cannibals.
