Is MMA a concept like JKD? Or does it refer soley to the sport?
Does it refer to how the fighters mix and match different martial arts, or just the sport format?
In the case of a concept, would Wing Chun orginally have been MMA? As it was initially taking parts from various Shaolin styles and combined them into something new, some people even call it "Shaolin Orthdox".
Or is that just more of a JKD thing?

MMA refers to the sport.
JKD is not a martial art, it's a philosophy, to use what works for you and discard what doesn't.
The concept of mixing various arts is very old, in fact, modern MMA looks alot like ancient pankration.

UFC is the sport brah.
I kid. MMA is a sport, and it is a system, of combining two or more martial arts. As Frank pointed out, JKD is a philosophy.

there are a few related concepts & ideas a lot of people confuse
mma is a sport that used to be where 2 people from different styles fought but has evolved to a combat sport where most people are adept at a few different combat sports and fight each other, especially the champions al cross train in different styles.
cross training is mixing different styles that many mma fighters do
jeet kune do is a way of going about cross training and is often taught along side jun fan gung fu
hybrid martial arts are styles created from cross training like bruce lee's style jun fan gung fu was created from his cross training using the tao of jeet kune do.
