Anything that essentially occurs in clinch range I consider grappling... (btw, joint locks are joint manipulations).
If I have to "grab" you to execute a technique it is grappling. Anything that involves a dynamic motion to impact with a hard part of the body I consider striking. There is striking and grappling and grappling in striking. (Plum Clinch to knees for example). Don't forget a lot of sweeps and throws are done from plum.
I think more in ranges then I do something specifically "grappling" or striking, as being mutual exclusive. Just simply to me, if I am grabbing you, I am grappling you, if I am hitting you with a hard part of my body, I am striking you.
Just my two cents. I think stand up grappling is just as, if not more important than matwork, that is from the Judo perspective, Tachi Waza is equal in importance than Ne Waza, if you control how the fight goes to the ground, you have the initiative and start off in a dominant position. Standing locks and chokes count as grappling to me, and are just as much a part of it then techniques done specificially on the ground.

I thought I responded to this question. I guess I had only taken the poll.
Grappling is all of the above.
Let's define grapple which is the root word of grappling.
Grapple - to hold or make fast to something, as with a grapple.
to seize another, or each other, in a firm grip, as in wrestling; clinch.
to engage in a struggle or close encounter
Hmmm
You can't clinch, throw. choke, pin, complete a submission unless you first grab, gasp. Therefore it includes all of the above. To grapple you must me in close quarter contact.
I can go to the ground and strike or kick and not grapple. So just saying in groundwork will not suffice. In order to do many throws you must do some sort of wrestling. If you are clinching you are wrestling. If you are doing newaza you are wrestling. If you are standing you on the mat and struggling someone you are wrestling.
