Hi
I know BJJ is more than ground fighting, but does it teach standing submissions and chokes?
I know wrestling has standing guiltines like the one Jones got Machida with but what about BJJ? or Judo?

It does, yes.
The standing guillotine that Jones used on Machida is on the BJJ and Judo curriculum.

flying armbar, standing arm traingle choke & standing rear naked choke are taught in bjj too.
but once you understand the whole concept of position and submission and you know most of the positions & submissions you can apply them in any way as long as you understand how to move from there.
