Low weight and lot of fast reps will give you endurance. What kind of strength are you looking for?

low weight; high reps (10-15) = endurance high weight; less reps (5-7) = Strength this is the one you want. just do not take in a lot of calories and you'll be toned and defined like I am but not "big" 1 Rep Max = Power & Explosion proper diet = More Muscle

another helper could be to not do full ROM exercises. do weight exercises that work out the area you will be doing techniques in rather than doing a general fitness type of weight lifting how you go thru the whole ROM (range of motion). know what i mean? say u were doing a a lateral raise for ur shoulders, don't have ur arms hangf down by the sides at each rep, cos u;ll never have a technique that needs ur arms down there, work just the infront or to the sides part of the exercises cos thats where u'll be doing ur techniques. it sounds odd but thats very martial arts specific not overall fitness, but it will result in less bulk if u were to try and stack on lots of weight
